Pizza Breakfast Casserole An Easy Make Ahead Recipe

We all love pizza, but who said it was just for dinner? Try this casserole-pizza, a delicious and easy-to-prepare recipe that will appeal to the whole family.

Breakfast ideas
During the week, breakfasts in our house usually include cold cereals or an occasional frozen waffle. When we have more time on weekends, we like to create a larger breakfast, like Belgian waffles, pancakes with applesauce with cinnamon or egg burritos.
If I'm cooking or hosting overnight guests, I prefer the hot breakfast recipes you prepare the night before so you don't have to worry about cooking in the morning.

Ingredients

  • 4 cups shredded frozen potatoes
  • 1/2 cup optional chopped green pepper
  • 4 oz diced ham optional
  • 1/3 cup optional chopped pepperoni
  • 1/3 cup optional diced onion
  • 6 eggs
  • 3/4 cup milk
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 3/4 cup pizza sauce
  • 1 cup grated Italian cheeses

Instructions

  1. Lightly coat an 8 x 8 or 2 quart baking dish with cooking spray.
  2. Spread the grated potatoes evenly across the bottom of the baking dish.
  3. Sprinkle with your favorite pizza toppings.
  4. Whisk together the eggs, milk, Italian seasoning, garlic powder, pepper and salt. Pour the egg mixture over the pizza pan.
  5. Cover and refrigerate overnight.
  6. In the morning, preheat the oven to 350 degrees. Cook the pizza pan for 50 minutes.
  7. Remove the casserole dish from the oven and spread the pizza sauce on top. Sprinkle with Italian cheeses.
  8. Return to the oven for 10-15 minutes. Let stand 10 minutes before serving. Enjoy!
